A year ago, the Montreal Gazette’s food critic, Lesley Chesterman, declared that No 900 was now the best pizza in Montréal. The pizzeria was founded by Dominic Bujold, a 2013 EMBA McGill-HEC Montréal alumnus and founder of Sushi Shop, with his partner, pizzaiolo Alexandre Brunet, and things are going well. They will soon expand with three new franchises: at the Marriott hotel on Peel, in Montreal, at the Faubourg Boisbriand, and in Quebec City.

A recent article on Eater Montréal explains how Dominic is developing Pizzeria No 900, with an approach similar to the one he used with Sushi Shop:

Bujold sold his Sushi Shop chain to Stanley Ma’s juggernaut MTY Food Group in 2006 for millions. History suggests that the businessman has similar plans for No 900: establish strong brand awareness, rapidly expand via a franchise model, and take over a significant share of Quebec’s fast casual restaurant market. Prospective franchisees can expect to pony up a minimum of $200,000 for a No 900 restaurant. Bujold and Brunet have plans beyond la belle province too. Indeed, the duo announced at the start of the partnership, when No 900 was merely a food truck with a lone brick-and-mortar outpost: “We’re not just aiming for Quebec. We suspect that his new business model includes some improvements, because between selling Sushi Shop and launching Pizzeria No 900, Dominic completed the McGill-HEC Montréal EMBA program, where he exchanged ideas and learning with his 37 classmates, business leaders themselves from a wide range of industries, and with the program’s renowned professors.

Dominic, himself, told us that “the EMBA gave me all the tools necessary to position my Neapolitan Pizzeria in an already saturated industry. I used all program’s modules but especially : the Value Creation module, the collaboration modules and courses on negotiation. For me, these learnings and my EMBA are priceless.”
